１．New Item 「OCTOMORE 10.1
SCOTTISH BARLEY」The other one
This month, we are pleased to introduce two new Islay malts that are available in limited quantities.
(1) OCTOMORE 10.1 SCOTTISH BARLEY
Distilled from Scottish barley in 2013, Octomore 10.1 is the benchmark upon which the 10 Series is based.
Intentionally reverted to a five-year aging process using only American whiskey oak barrels, the 10.1 edition clearly represents the framework and presence of the Octomore spirit.
A blend of smoke and gentle aging, 10.1 embodies first and foremost the true potential of thoughtful, time-consuming and careful distillation.
<Distillation>
■Barley harvested in 2012 and distilled in 2013
■Scottish Concerto Barley 100％
■Phenol value 107ppm ■Alcohol content 59.8％
■Non-chill filtered, no coloring added
<Mature>
◼Aged in first fill American oak barrels throughout.（Jim Beam, Heaven Hill, Buffalo Trace, Jack Daniels）
◼ Aged on Islay for the entire period ■Aged 5 years
◼ World limited: 42,000 bottles

(2) OCTOMORE 10.3 ISLAY BARLEY
Aside from the fact that 10.3 is the first six-year aged, the highest quality American oak barrels softened and perfumed the spirit, bringing it to life.
Both 10.1, made with Scottish barley, and 10.3, made with Islay barley, are made with Concerto barley, which has a low phenolic value, and both are aged exclusively in American oak barrels.
The difference in flavor comes from the difference in growing conditions of the barley.

２．Sake of the Month, Original Cocktail “Matcha Chocolate Martini”
Continuing from the previous issue, we would like to introduce the “Matcha Chocolate Martini” from the popular original cocktails at Toranomon BAR Shinkai.
◆Matcha Chocolate Martini
Matcha and chocolate are said to be an excellent match, and there are many “matcha and chocolate sweets” in the confectionery world, both Japanese and Western.
The “Matcha Chocolate Martini” was developed by replacing the matcha and chocolate in a cocktail.
It is also suitable for women who prefer sweet cocktails or as a dessert drink to finish off the evening.

３．”Shiga Kogen Beer IPA”, a domestic craft beer
Continuing from the previous issue, we would like to introduce our popular “domestic craft beer”.
◆Shiga Kogen Beer IPA
It is made according to the traditional style of India Pale Ale (*), the main feature of which is to increase bitterness by injecting a large amount of hops.
This 100% malt beer is handcrafted with spring water from Shiga Kogen and carefully selected ingredients.
Fresh hops and the caramel-like sweet aroma of roasted malt give it a delicate and distinctive flavor.
It is said to have been established in the past when large amounts of hops were injected to prevent deterioration.
This beer is a beer that allows you to fully enjoy the true flavor of India Pale Ale, which is said to have been established when large amounts of hops were added to prevent deterioration.
※India Pale Ale (IPA) was created in the 18th century to send to the British in colonial India.
It is said that IPA was first brewed by adding a large amount of hops in place of preservatives to increase the alcohol content so that it would not spoil during transportation. The IPA is characterized by its mellow hop aroma and bitterness.

４．Seasonal fruit cocktail “Kinkan”
In December, there were so many different fruits on the market that even our restaurant had a hard time choosing the right lineup, but finally the “Kinkan,” a true winter fruit cocktail, has arrived.
Kinkan” is an excellent partner for gin and has a unique aroma and bittersweet flavor that is addictive!
We carefully remove the seeds from the Kinkan, lightly mash it, and serve it in a simple gin and tonic cocktail.
Of course, we can also make it with vodka, rum, or liqueur as a base if you prefer.
For customers who want to warm up, we also offer “Kinkan’s Hot Gin & Tonic”.
